When does the ordering window close for the 2015 model year?
From what I know, I don’t think it closes until vehicles from the next model year are due to enter production. So, about May of 2015.
It won’t be the same for every vehicle line. In the instance of Sierra and Silverado pickups that are produced at 3 different plants, even within one vehicle line, it could differ depending upon which model you wanted.

A gas station near me sells non ethinal gas and tells me ethinal gas will ruin engines, exhaust ect. At 80 cents over the usuall 91 octane is it worth driving 30 miles to get it and does it have the cleaning ability as 91 octane that i do use or are they just trying to get more money from me?
He is just trying to get more money from you. And gasoline does not clean your engine. That is a bunch of hype.
