Any luck with this issue? I have a 2014 Silverado 5.3 with the exact same problem. Changed the temp sensor and problem went away so I thought I was good. A month or so later driving down the road and the gauge shows 160 with no movement at all. A few days later it will start working on its own for a month or so. This problem has been sporadic, but GM dealer says nothing they can do with no check engine light. Thinking about changing thermostat but you would think if it was thermostat, the gauge would have some kind of movement still. Thanks.
