It’s not often we see a Chevy Corvette food truck, but that’s exactly what the “Vettro” is, and it’s on display at the New York International Auto Show. It’s going for a world record that nobody was keeping track of previously: the world’s fastest food truck.

The basis of the Vettro is a 2021 Corvette Stingray Z51. That’s right: a C8-based food truck. The body is sourced from a 1952 International Metro van. Vette plus Metro equals Vettro. It was built by Luc’s Fajita Hut, which serves New Jersey and New York.
One of the most amazing things about the Vettro is that it appears to have a largely unmodified Corvette interior. The seats, steering wheel, dash, infotainment screen, and center stack all look factory.

It’s a little unclear how capable the Vettro is at actually preparing food. Unlike a more traditional food truck, it doesn’t have a full-blown kitchen inside. The C8 Stingray’s mid-mounted powertrain, comprising a 6.2L V8 LT2 mated to an 8-speed dual-clutch transmission, is in the way.
Instead, it has panels on the sides of the body to reveal serving areas, and Luc’s Fajita Hut has demonstrated that there’s enough room for a Snap-On toolbox that was converted into a beer tap. The actual fajita cooking would need to occur in a different truck, but the Vettro can store and serve said fajitas.

This Corvette food truck will go for the first-ever Guinness world record for the highest speed ever achieved by a food truck. Guinness told Luc’s Fajita Hut they need to hit 130 mph for the record to be recorded. The Vettro will attempt this record this July at the Indianapolis Motor Speedway during Memorial Day weekend as part of the Indy 500 festivities. If you’re going to Indy this year, don’t miss the opportunity to see a Corvette food truck on the track.
We’ve seen many unique Corvette builds over the years, but this is a new one, even for us. A mid-engined sports car like the C8 is a highly unlikely and, frankly, impractical candidate for a food truck build. However, the Vettro is sure to draw some attention to Luc’s Fajita Hut.
